You know what they say, an apple a day keeps the doctor away… and we have the most delicious to make sure you are getting your recommended daily dose. These Baked Apples by our contributor Lynne Whelehan are perfect dolloped with greek yogurt for sweeter alternative to breakfast, or even as a deceptively decedent dessert for your next dinner party – just what the doctor ordered.



4 Apples
4 dates
2 tbsp. Coconut Oil, melted
Cinnamon, sprinkled
Grated Nutmeg
Drizzle of Rice Syrup


Preheat oven to 180 degrees
Core apples and rub/massage coconut oil all over the apple, ensure it is fully coated. Pit dates and pop in the middle of the apple. Next sprinkle cinnamon, nutmeg and drizzle rice syrup over the apples evenly.
Bake for 35-40 minutes until apples are soft.
Remove from oven place on a large plate and dollop greek yogurt on top, crushed almonds and raw cacao nibs.
